Health Benefits of Yogurt

Curd

Fermented milk is curd. It is nutritious and delicious food. It is one of the most valuable therapeutic foods. In Europe and America, yogurt is usually made from cow milk. Buffalo milk is also widely used in India. Sheep and goat milk are used in Russia.

Yogurt should be made with pure and good milk. Milk should be boiled for about 10 minutes before making curd. Then add good starter (starter) and mix it well with milk. Usually one teaspoon of pure is enough for 500 ml of milk. The quality of yogurt largely depends on this mold. Curd can easily be made in summer. In winter it should be covered with a blanket and kept in a warm place. Curd generally takes 6 to 8 hours in summer. And in winter it takes 12 to 16 hours.

Yogurt is very nutritious food. It is a good source of protein, essential vitamins and minerals. It is rich in calcium and riboflavin. Yogurt protein is digested more quickly than milk protein. Natural benefits and healing rituals of Curd

While curd has nutritional content like milk, curd has more therapeutic or healing value. During yogurt making, bacteria turn milk into curd. Yogurt bacteria inhibit the growth of harmful bacteria in the alimentary tract, while stimulating the growth of beneficial bacteria for digestion. These beneficial bacteria help in the absorption of minerals and the synthesis of B group vitamins. Whey, which has the same nutritional and medicinal value as curd, is made by churning the curd and removing the fat and adding water in the form of butter.

Yogurt is beneficial for nerves and skin. The bacteria in yogurt softens and brightens the skin. Orange or lime juice mixed with curd is a good facial cleanser. It hydrates the skin and provides essential vitamin C to the fruit juice. Mix one tablespoon of fruit juice with one cup of curd. Apply it on the face and neck and wait for 15 minutes to dry. Then wipe with a soft tissue and wash with water.

Yogurt can be mixed with flour to brighten and soften the skin. Keep this mixture on the face for 15 to 20 minutes and wash it off with warm water. For acne, mix curd with chickpea flour and apply it on the face and wash it.

Yogurt is also good for hair conditioning. It makes the hair soft, healthy and strong. Massage the roots of the hair with curd before rinsing. Dandruff is also removed.

Gastro-intestinal diseases

Apart from the lactic acid bacteria of yogurt, its acid and lactose have therapeutic role in various diseases. Yogurt works well in gastrointestinal disorders like constipation and diarrhoea. Yogurt has no effect on the acid-base balance of the body. Apart from aiding in digestion, curd helps in the secretion of hydrochloric acid, pepsin and renin, reducing dryness and gas in the stomach. Diarrhea and dysentery bacteria cannot survive because of the lactic acid in curds and whey. Whey enema works very well in colitis, chronic constipation, diarrhea, dysentery and gastric ulcers.

Insomnia

Yogurt works well in treating insomnia. The patient should eat a lot of curd and massage the head. Sleep will come for this.

Premature aging

Longevity is associated with yogurt. The human body is gradually poisoned and the immunity weakened by normal diet. This detoxification process can be stopped and the alimentary canal kept healthy, if yogurt or some kind of acidophilus milk is consumed regularly.

Hepatitis and jaundice

Excess ammonia secretion, which is one of the main causes of hepatitis, can be stopped by consuming enough yogurt. The lactic acid bacteria in yogurt destroy ammonia production. Yoghurt or whey mixed with honey is the ideal food for jaundice.

Burning in the rectum

Burning and itching in the rectum, after bowel movements, can be effectively controlled by consuming enough curd and lemon juice. Yogurt acidifies the stool, thus reducing irritation and itching.

Skin disease

Skin diseases like psoriasis and eczema are benefited by consuming curd in the form of whey. A thin cloth soaked in the solution should be applied to the affected area. This compress can be kept always or only at night. The area should be properly cleaned after removing the compress. It is also effective in skin inflammation.

Use

Yogurt is consumed in different ways in the Indian subcontinent. It is eaten with meat and vegetable curries, rice, fruits and fish. Again it is eaten with only salt, sugar, langar powder or honey. Several foods are made with yogurt. It is also widely used in the form of ghol and lasis.
